Giada De Laurentiis Calls This Recipe the ‘Perfect Limbo Week Pasta’ & It’s Secretly Packed With Protein
This is a weird week. All I know is it’s not Christmas, and we haven’t made it to New Year’s Eve yet — but other than that, I’m lost. Giada De Laurentiis calls this “limbo week,” and, thankfully, she has the perfect recipe for that. The Italian chef shared her go-to pasta that’s easy to make and packed with protein, and we’re going to make it on repeat until this week.
The Giadzy founder shared photos of the recipe on Instagram this week. “Behold the perfect limbo week pasta,” De Laurentiis described it in her caption. “A creamy dreamy sauce made with blended cottage cheese and sweet canned tomatoes, this is secretly packed with protein, but tastes completely decadent.”
“Peak need-comfort-but-also-need-balance energy here!!” she added.
Um, yes please! Seriously, what could be better than a warm and cozy comfort pasta that will fuel us through January?
De Laurentiis shared the details of the recipe — officially named Whipped Cottage Cheese Tomato Basil Pasta — on her Giadzy website. It takes less than 30 minutes of combined prep and cook time and requires only a few simple ingredients.
Start by blending canned tomatoes (she uses her Giadzy corbara tomatoes), cottage cheese, and other ingredients in a blender, then adding a few more ingredients and pulsing it to combine. Then, boil pasta (she uses organic nodi marini pasta); strain; and pour into the bowl with the sauce. You’ll add some pasta water and parmesan cheese, toss and serve. Don’t forget to pour your favorite glass of red or white to go along with it, too.
This is quick to whip up, delicious to eat, and helps fills the gap between all the holiday leftovers and pie we’ve been consuming. It’s hot, fresh, and creamy-good, so save it for whenever you need an easy dinenr.
