How to prepare egg sauce

Delicate and tasty egg sauce is perfect for meat, fish, side dishes and sandwiches. Serve it immediately after cooking, it is not for storage.

Recipe #1

Ingredients:

  1. Eggs of the highest category - 3 pcs.
  2. Butter - 100 g
  3. Lemon juice - 1 tbsp.
  4. Salt - 1/2 tsp.
  5. Smoked paprika - 1/2 tsp.

  2. Cooking time - 0 h 15 min

Instruction:

  1. Melt the butter in the saucepan.
  2. Separate yolks from proteins. Add salt to the yolks, smoked paprika, lemon juice and whisk.
  3. In a mixture of yolks gradually pour melted butter and continue to whisk until it gets thick.
  4. Cool the sauce and store no more than three hours.

We need:

- 3 eggs (yolks only)

- 2 tablespoons of butter

- 200 gr. of milk

- 2 tablespoons of flour

- Salt and spices (we offer ground black pepper and dry basil)

So, let's begin.

  1. Melt the butter and mix it with flour. On a small fire bring it to a golden color.
  2. Then add milk.
  3. Continuously stirring, bring the mass to density.
  4. Remove it from the plate and cool it down. Then put yolks, salt, and spices into the mass.
  5. Gently stirring, (not letting to boil) cook the mass for another fifteen minutes.
  6. Serve with vegetable, fish or meat dishes.

Or, if you make it denser, you can use it as a dip for chips, for example.

Ingredients:

- 6-7 hard-boiled eggs

- 10 anchovy fillets

- 3 small shallots onions

- 6 small pickled gherkins

- A few stalks of dill and parsley

- 4 tbsp. of thick yogurt or low-fat sour cream

- 2 tbsp. of mustard with seeds

- 2 tbsp. of olive oil

- Freshly ground black pepper

Step by step guide

Step 1

Clean eggs and finely chop. Clear shallots and cut it as small as possible. Immediately salt shallots, pour oil and leave, while everything else is being prepared.

Step 2

Finely chop the gherkins, chop the anchovies and greens, removing the stems. Mix yogurt (sour cream) and mustard.

Step 3

Stir all the ingredients. Season with pepper sauce and give a little brew. Serve with boiled potatoes and tin tomatoes, cauliflower, broccoli, zucchini.

Ingredients | Serving 2

- 3 eggs.

- 2 spoons of sliced pepper

- Vegetable oil (200ml).

- 2 cups of sliced fresh tomatoes.

- Sliced pepper to taste.

- 1 cup of sliced onions.

- One cube of maggi or knorr.

- Salt to taste.

- 2 spoons of sliced green peppers (optional)

How to Make Egg Sauce for Yam

  1. Slice your tomatoes, onions and peppers as you would see in the plate below. You can easily do this with a sharp knife and chopping board.
  2. Set your frying pan on heat and add just 200ml of oil (vegetable or olive oil), leave for one minute before adding the sliced tomatoes/onions/peppers. It is best if you have a non-stick frying pan. Allow it to fry for 10-15 minutes. Remember to stir all the time, you don’t want to end up with burnt tomatoes.
  3. Once it is adequately fried, add salt to taste. Add half a cube of maggi or knorr also. It would end up looking like this. This is what you get when you are trying to make egg sauce for yam.
  4. Beat the eggs in a separate plate. Add a pinch of salt to it and then pour on top of the frying tomato/onion/pepper combination. Lave for a minute, and then stir. Try to break the crumbs into smaller sizes.
  5. You can sprinkle a handful of fluted pumpkin (ugu) leaves if you like. Try to break it into tiny crumbs in order to achieve the kind of image above (as served above).
