The Pioneer Woman’s Show-stopping St. Patrick’s Day Pie Requires Just 4 Ingredients
You don’t have to travel to the end of the rainbow to find a sweet prize — Ree Drummond has got you covered! The Pioneer Woman has something better than a pot of gold this St. Patrick’s Day: a show-stoppingly good ice cream pie that will have everyone (and their kids!) dying for seconds. The best part? You can whip up this cool green dessert with just four ingredients.
“This recipe is loaded with mint ice cream, mint chocolate sandwich cookies, whipped cream, and a major shortcut: store-bought chocolate cookie pie crust!” The Pioneer Woman Magazine dished about the recipe in a March 4 Instagram post. “Throw together the recipe at the link in our bio, and serve the tasty end result on St. Patrick’s Day! ☘️”
The cake looks so refreshing and delicious, with its mint chocolate chip ice cream base and green Oreo cookies crumbled on top. To make it yourself, you’ll need 1.5 pints of mint chocolate chip ice cream, softened, which you’ll spread in the chocolate cookie pie crust. For the topping, sprinkle one cup of crushed store-bought cookies (like Oreos) over the top, sticking them into the ice cream so they stick.
Freeze for an hour, then add the remaining ice cream to the top and add a layer of whipped cream and more crushed cookies. Freeze for another two hours and serve. Because they only thing better than a pie, is a layered pie, of course!
