I like the Cruncher and Crackler Cheddars especially Sainsburys Barber Cruncher and some of the softer slightly pungent, Cavern Aged Cheddars. Along with Double Gloucester and Chives, Manchego and Edam

Cheeses for melting Monterey Jack and Jarlsberg
Love smoked cheese, now the cold nights are coming, I cold smoke my own Cheeses and butter. I just get a good couple of blocks of 500g Mature cheddars or a block of Jarlsberg from the deli, cold smoke it for 4 hours with different wood dusts and leave it for 2 weeks in the fridge for the smoke to settle and permeate through the cheese. Tastes much better than the regular shop bought smoked cheeses.
