Bearing in mind what industry they are in and how much of a shit year they have had it might be worth just not pursuing it. They might need that money a lot more than you do.
It doesn't sound like they have been arseholes or a big company acting with contempt towards you.
I know you are looking for advice in obtaining the refund but do you really need the refund that much? They have already acknowledged that the service was substandard so you know you are in the right, they have apologised - id move on if you can afford to.
You already said you got a good deal, you say you were badly let down but I disagree with that characterisation based on what you have written happened. Not optimal but in no way badly let down. i can imagine it was frustrating when you just want everything to run perfectly but its such a small part of what the event is actually about. In effect with the good deal, you have already had a refund in a way.
